Olio Extra vergine di Oliva

Cultivar: Moraiolo, Frantoio e Leccino.

Harvesting takes place at the beginning of veraison, usually in the first half of October, and is done mechanically. The olives are immediately transported to the mill in special boxes and processed within 8 hours of harvesting.

Processing involves daily cold pressing in a continuous cycle, allowing the oil to maintain its distinct organoleptic characteristics over time..

Taste: medium strong tending to spicy.

Color: golden yellow with green nuances.

Hints: fruity, releases intense fragrances, with aromatic notes of artichoke, fresh grass, green olive and walnut.

Gastronomy: raw, especially recommended for salads, cooked vegetables, legumes, soups and on grilled meats.
