Our production process

It is all about the passion of those who work the land, follow the harvest, create our oil.

OUR OIL MILL

We aim for quality first.

We take care of production from harvesting to pressing, in full autonomy, and this allows us to always focus on quality, without compromise. Our only goal is to make an excellent oil, which we are the first to enjoy every day in the family and which we are proud to put on your tables.

Harvest​

We harvest our olives at the beginning of veraison, from late September to the first half of October. To preserve the polyphenolic richness of the drupes, we pay close attention to the different ripening times of our cultivars, and within 8-10 hours we take them to the mill to start production.

Defoliation and washing​

Thanks to our harvesting techniques, the olives do not come into contact with the soil, preventing the drupes from being exposed to risks of premature oxidation. Each afternoon, crates laden with olives arrive at the mill and are thoroughly washed to remove foliage and surface impurities.

Crushing

In the continuous cycle crusher, the olives are processed mechanically, through a counter-rotating grid, and are transformed into a homogeneous paste that contains Peel (epicarp), Pulp (mesocarp), and Kernels (endocarp), which perform a draining function and facilitate the subsequent separation of the oil from the paste.

Kneading

Kneading is a fundamental step, a very delicate point where the skill of the miller ensures the production of an excellent extra virgin oil. It will be crucial to control oxygen, processing time and temperature in order to preserve the organoleptic characteristics and health properties of the extra virgin oil.

Extraction

Our extraction process aims to maximize the presence of anti-oxidant substances in extra virgin oil, the so-called polyphenols; and preserve the intensity of the olfactory-taste characteristics of extra virgin oil (fruity, bitter and spicy).

Separation

Having reached the last stage of the oil production process, residues of water and solids must be well separated from the oil coming from the decanter. Such residues must also be removed quickly to maintain high product quality.

Bottling and storage

Through our storage and bottling process, we ensure that we minimally expose the oil to light and oxygen, controlling the temperature of the storage environments and carefully selecting the quality of our bottles and bag-in-box solutions (the best for distributing and consuming a quality oil).
